    Ethyl maltol (CAS 4940-11-8) is a broad-spectrum flavor enhancer and sweet-taste potentiator, listed as food additive E637, able to magnify and round off caramel, cotton candy, fruity, chocolate, coffee, dairy and fermented milk notes, therefore widely used in hard and soft candies, biscuits, breads, ice creams, yogurts, jams, carbonated and still beverages, wines, canned goods, liquid seasonings, sauces, instant noodles and processed meat products; at very low levels (typically 5-50 ppm) it masks metallic or bitter off-tastes of artificial sweeteners, suppresses animal fishiness and lifts overall aroma; beyond food, ethyl maltol is added to tobacco, cigars and e-liquid flavor bases to impart a pleasant sweetness, employed in personal-care products and perfumery to create gourmand effects, and used in pharmaceutical syrups and chewable tablets to obscure active-ingredient bitterness, while its high safety margin, good thermal stability and mild iron-chelating ability also allow it to act as a color stabilizer and light antioxidant in numerous formulations.
