Ethyl 2-methylpentanoate (CAS 39255-32-8) is a branched-chain ester with a sweet fruity aroma reminiscent of pear and pineapple, making it widely employed as a flavouring agent in foods, beverages, chewing gum and chewable pharmaceuticals, as a top-note ingredient in perfumes, air fresheners, personal-care products and household cleaners; beyond its sensory role it serves as a medium-polarity solvent for resins and actives, a flavour carrier in microencapsulation, and an intermediate for synthesising higher esters, acids or alcohols in the fragrance industry, offering moderate volatility, low toxicity and compliance with EU Flavouring Regulation, FEMA/GRAS status and RIFM safety recommendations.
