D-Glucitol, monooctadecanoate, commonly known as sorbitan monostearate, is a nonionic surfactant widely used as an emulsifier and stabilizer in a range of formulations. In practice, it finds applications in cosmetics and personal care as an emulsifier and stabilizer for creams and lotions; in food processing as an emulsifier for oil–water systems; in polymer and plastics processing as a dispersing/stabilizing aid; in coatings and inks as a wetting and emulsifying agent; and in pharmaceutical formulations as an excipient/emulsifier.
