Applications
Bis(2-Methyl-3-furyl) disulfide (CAS 28588-75-2) is a sulfur-containing flavour compound naturally occurring in roasted coffee, fried onions and grilled meat; in the food industry it is employed as a powerful aroma additive to recreate meat, onion, garlic, smoke, curry or soy-sauce notes in instant soups, dry seasonings, sauces, snacks, plant-based meats and seafood preparations, where concentrations of only a few parts per billion can impart a lingering sweetness and warm depth; it is also used as an analytical standard in GC-MS for quantifying volatile sulfur species, as a precursor in black-garlic formulations, as a probe for Maillard reaction studies, for tailoring the flavour profile of specialty coffee, tobacco and craft beer, and in sensory science to elucidate the relationship between disulfide structure and the perceived intensity of onion-meaty odours.
