Applications
(6E)-6-Undecenal (CAS 60671-73-0) is a linear unsaturated aldehyde used mainly in perfumery to impart aldehydic, green, citrus-peel and slightly fatty–waxy facets, enhancing freshness and diffusion in fine fragrances, fragranced cleaners, candles and personal-care bases; in flavor applications, at trace levels it can contribute citrus-peel, green-herbal or peel-like notes to beverages, confectionery, baked goods and savory soups/sauces, typically blended with citrus terpenes, ionones and long-chain alkanals; in organic synthesis it serves as a versatile intermediate for double-bond transformations (hydroboration–oxidation, epoxidation), reduction/oxidation to alcohols, acids, acetals or surfactant precursors, and as a reference/marker in GC–MS, sensory studies and stability assessments; because unsaturated aldehydes are sensitive to strong acids/bases, metals and light, formulations usually include antioxidants, pH control and tight packaging, and usage should follow IFRA guidance/food-flavor regulations and the supplier’s SDS.
