Massoia Lactone (CAS 54814-64-1) is a naturally inspired γ-lactone with a rich coconut-like, creamy sweetness that is widely employed at trace levels as a flavour additive in chocolate, coffee, bakery products, confectionery, tropical beverages, plant-based dairy analogues, butter and cream replacers, intensifying gourmand character while offering a cost-effective alternative to natural coconut extract; in perfumery it delivers a warm milky, caramel nuance to oriental, vanilla and gourmand accords, blending synergistically with coumarin, tonka, musks and fruity lactones, and remains stable in soaps, detergents, scented candles, and skin- and hair-care cosmetics; in research it serves as a GC-MS standard, a chiral building block for semisynthesis of other fragrance lactones and bioactive molecules, is investigated for antifungal and antibacterial activity, for insect pheromone formulations, and, when microencapsulated, for controlled aroma release in smart food packaging.
