5-Decenal (CAS 60671-72-9, dec-5-enal) is a straight-chain unsaturated aldehyde with a fatty, green, citrus‑waxy odor; it is used as a flavor and fragrance ingredient to impart aldehydic and citrus notes in fine fragrance, home/air care and candles, and—where permitted—at very low levels in flavor formulations; it also serves as an organic intermediate (reduction to 5-decenol, hydrogenation/epoxidation and ring‑opening to tune functionality, oxidation to the corresponding acid/esters, formation of imines/oximes for pharma intermediates), an analytical standard in aroma and GC–MS studies, and a building block for semiochemicals/pheromones in crop protection; applications often require control of geometric isomer purity (E/Z) due to strong effects on odor/activity, and safe handling as a flammable, irritant liquid stored tightly closed away from heat, light, and strong acids/bases/oxidizers.
