4-Hydroxy-4-methyl-5-hexenoic acid gamma lactone (CAS 1073-11-6) is a gamma lactone with rich fruity, creamy tonality used as a flavor ingredient in foods and beverages to impart peach, apricot, coconut, dairy and ice-cream nuances, and in perfumery and personal care to add soft lactonic depth to fruit and white-floral accords; owing to its allylic double bond, tertiary hydroxyl and stereogenic center, it also serves as a versatile synthetic building block for pharmaceuticals, natural-product motifs and agrochemical intermediates via selective transformations such as epoxidation, hydroboration or esterification, and is explored in materials and delivery research to generate biodegradable esters, profragrances and controlled-release systems, as well as an analytical standard and sensory reference in flavor evaluation, with use subject to applicable safety and additive regulations.
