Applications
3-(Methylthio)-1-hexanol (CAS 51755-66-9) is a powerfully odorous thiol alcohol naturally occurring in black-currant buds, asparagus, grapefruit and, most famously, the “tropical-boxwood” bouquet of Sauvignon Blanc wines; in the flavour industry it is added at trace levels to reinforce green, exotic-fruit, mild onion/garlic or truffle nuances in chewing gum, snacks, beverages, instant soups and seafood sauces; in niche perfumery it provides a realistic leafy-vine and freshly cut grass effect within green-fruity-sulfur accords; the molecule is also employed as an analytical standard for monitoring free/precursor thiols during fermentation, assessing fruit ripeness, enzyme efficiency, training sensory panels, and occasionally as an intermediate for synthesising other S-alkyl derivatives.
