cis-3-Hexenyl pyruvate (CAS 68133-76-6) is a green-leaf and fruity odorant widely employed in perfumery, food flavorings, deodorants, household cleaners and scented candles to impart a fresh, natural character; it is also used as a synthetic intermediate in plant-aroma research, as an analytical reference for assessing green flavor quality in fresh produce, as an active component in insect-lure formulations and plant-defense studies, and, because it readily hydrolyzes to cis-3-hexenol, as a slow-release reservoir that prolongs the longevity of green notes in commercial fragrance applications.
