3‑Heptenal (CAS 89896-73-1) is an unsaturated aliphatic aldehyde used as a fragrance/flavor ingredient or precursor imparting green, fatty, lightly fruity nuances in fine fragrance, detergents, personal care, and food flavor formulations (where permitted), and as a versatile synthetic intermediate to access the corresponding alcohols, acids, esters, and epoxides via selective reduction/oxidation, epoxidation, hydroboration–oxidation, and Schiff‑base formation with amines; in flavor chemistry and food science it serves as a GC/GC‑MS reference standard and a model volatile from lipid oxidation (monitoring aldehydes in oils, meats, dairy, and produce), supports sensory evaluation and controlled‑release/encapsulation studies; in agrochemical and chemical ecology research it is a building block for alkenyl chains and a candidate semiochemical/insect attractant, with odor and reactivity tunable by E/Z isomer selection.
