Applications
3-Decen-2-one (CAS 10519-33-2) is an unsaturated aliphatic ketone with a mild fruity-creamy odor that is widely employed as a flavoring ingredient in food (confectionery, beverages, dairy), a fragrance modifier in perfumes, cosmetics and personal-care products, an intermediate for pharmaceutical and agrochemical synthesis (precursor to pesticides and bioactive molecules), an insect attractant in biotraps, an analytical/sensory standard in flavor research, and a model substrate for mechanistic studies of α,β-unsaturated ketone reactions.
