3-Decen-1-ol, (3E)- (CAS 10339-60-3; aka trans-3-decen-1-ol, E-3-decenol) is primarily a flavor and fragrance ingredient providing fresh “green-leafy,” slightly fatty, fruity (melon, apple/pear), citrus, and light floral nuances; it refreshes top notes and adds natural depth in fine fragrances, soaps, shampoos, cleaners, fabric softeners, air care, candles, and diffusers; in foods it fine-tunes beverage, confectionery, fruit/vegetable, and dairy flavors at very low dosages to avoid dominance; in aroma chemistry it serves as an intermediate to esters and derivatives (e.g., 3-decenyl acetate) to broaden tonal palettes; in R&D it is used for sensory modulation and as a reference/standard in GC/GC–MS analysis of unsaturated fatty alcohols; it can act as a mild co-solvent in fragrance concentrates due to moderate polarity; it blends well with citrus, herbal–green, melon/ozonic, and marine themes; it is reasonably stable but oxygen-sensitive, so formulas often include antioxidants and require cool, light-protected, airtight storage.
