    2,5-Dimethyl-4-methoxy-3(2H)-furanone, CAS 4077-47-8, also known as DMMF or strawberry furanone, is an ultra-low-odor-threshold flavor molecule with caramel, honey and ripe-berry nuances that occurs naturally in strawberries, ripe tomatoes, roasted coffee, cocoa and other Maillard-derived foods; in the food industry it is employed to recreate or boost fruit, dairy, confectionery and beverage profiles (both alcoholic and non-alcoholic), enhance soy sauce, fish sauce, smoked tobacco and e-liquid aromas, and acts as a flavor modulator that rounds, warms and prolongs overall notes; thanks to moderate thermal stability it can be added to dry seasoning blends or baking marinades to help develop an appetizing golden-brown crust; in scientific research DMMF serves as a reference standard for Maillard reaction intensity, a quality marker in post-harvest fruit storage, a tracer for aroma evolution during roasting processes, and has recently been explored as a synthetic intermediate for antioxidant and antimicrobial candidates in pharmaceutical and cosmetic formulations.
