2-Nonen-1-ol (2E) is an unsaturated C9 aliphatic alcohol with a fresh green cucumber–melon character and a hint of citrus peel, widely used in flavor and fragrance work to build or boost “fresh-cut” green notes in cucumber, melon, apple, pear, berry, and citrus profiles for beverages (soft drinks, seltzers, alcoholic drinks), confectionery, dairy/fermented milk, savory products, and pickled items; in perfumery and personal/home care (fine fragrance, shampoos, body washes, soaps, laundry, air care) to deliver watery-green top notes and a freshness effect; as a synthetic intermediate to nonenyl esters (e.g., nonenyl acetate, propionate, butyrate) and other aroma ingredients (including controlled oxidation to 2-nonenal), and as a versatile building block for epoxidation and hydroboration/oxidation to access C9 epoxides, alcohols, and diols; as an analytical reference standard for GC–MS profiling of plant volatiles, studying aroma release and oxidation in foods and packaging, and occasionally as a masking agent to suppress fatty/fishy off-notes in flavor and surfactant systems; it is typically dosed at trace to low-ppm levels to avoid soapy or overpowering effects, and should be stored tightly closed under inert atmosphere, cool and light-protected due to volatility, flammability, and oxidation sensitivity.
