    2-Methyl-3-(methylthio)pyrazine (CAS 2882-20-4) is a highly potent pyrazine odorant used at trace levels to build and fine-tune roasted, baked potato, nutty, caramelized, coffee-cocoa, green/vegetal-bell pepper notes in flavor formulations; it enhances authenticity and depth in savory seasonings, soups and sauces, instant noodles and snacks, plant-based meat and seafood analogs, baked goods, roasted nuts and cereals, instant coffee, chocolate and fermented beverages, as well as pet food flavors (typically at ppb-ppm to avoid overpowering); it is also used in fine fragrance and home care to add green-vegetal or smoky-roasted facets to “green” and “gourmand” accords, in sensory and analytical work (reference standard, GC-O/GC-MS spiking, panel training, aroma recombination) and in studies of Maillard chemistry/food aging, and features in odor control and microencapsulation or carrier-based delivery strategies to improve stability, release and retention during processing and storage.
