2-Ethyl-4-methylthiazole is a key natural flavor molecule with a characteristic roasted, coffee-nut aroma, and is therefore widely employed as a flavouring agent in foods (instant coffee, chocolate, biscuits, savory snacks, instant soups), beverages and e-liquids to add caramel-grilled nuances; it is also used as a GC-MS calibration standard, a tracer in Maillard reaction studies, a sensory reference compound, a gourmand note in fine fragrances, and a flavor simulator for premium animal feed and fishing bait formulations.
