    2-Ethyl-3-methylpyrazine is a flavor compound with a distinctive roasted peanut, malt, cocoa and coffee note, making it widely employed in the food industry as an aroma enhancer for instant coffee, chocolate confectionery, nut snacks, barbecue seasonings, broths, instant soups and vegetarian meat products; in addition, thanks to its high odor stability, it is used in flavor formulation for tobacco, vape liquids, gourmand-style perfumes and scented candles, and also serves as an intermediate in the synthesis of more complex pyrazine derivatives investigated for pharmaceutical and agrochemical applications, helping to build the deep brown-roasted profile that characterizes many contemporary food and beverage products.
