  • Applications

In practice, 2-Butenoic acid, 2-methyl-, 2-methyl-2-propen-1-yl ester, (2E)- (commonly called methallyl tiglate) is used mainly as a fragrance/flavor ingredient with a fresh green–fruity character (apple/pineapple-like), applied in perfumes, personal care and household deodorizing/cleaning products, and as a very low-level flavor in foods; it is also employed as an intermediate/building block in organic synthesis (e.g., transesterification, hydrogenation, or radical additions across the C=C) and as a reference standard for structure–odor studies and GC/MS analysis of unsaturated esters.
