    (Z)-Methyl cinnamate (CAS 19713-73-6) được ứng dụng chủ yếu như chất tạo hương và điều biến mùi trong nước hoa, mỹ phẩm, xà phòng, chất tẩy rửa và nến thơm nhờ sắc thái ngọt, balsamic, trái cây hơi cay-quế đặc trưng của đồng phân Z (thường mềm, mịn hơn so với E) và có thể làm chất cố định nhẹ giúp kéo dài độ bền hương; trong thực phẩm, nó được dùng ở mức vết để tạo/điều chỉnh nốt dâu, mơ, đào, anh đào và quế trong đồ uống, kẹo và sản phẩm nướng; trong tổng hợp hữu cơ và hóa dược, hợp chất này là synthon este α,β-không no thuận tiện cho các biến đổi như hydro hóa thành methyl 3-phenylpropionat, epoxi hóa/dihydroxyl hóa, cộng Michael, cyclopropan hóa, cắt ester (xà phòng hóa về acid cinnamic) và chuyển ester/amid hóa nhằm tạo dẫn xuất cinnamat làm trung gian cho hương liệu, giàn khung chất lọc UV và nông dược; trong phân tích, nó được dùng làm chuẩn/đối chiếu GC/MS hoặc HPLC và marker mùi cho một số nguyên liệu tự nhiên, còn trong nghiên cứu vật liệu–quang hóa, nó là mô hình cromophore cinnamat để khảo sát quang đẳng phân E/Z, dimer hóa [2+2] và truyền năng lượng, với lưu ý thực hành rằng hợp chất dễ đồng phân hóa dưới ánh sáng nên cần bảo quản, pha chế tránh sáng.
