    Methyl trans-cinnamate (methyl (E)-3-phenyl-2-propenoate, CAS 1754-62-7) là một este thơm được chiết tách hoặc tổng hợp từ quế, hồi và các nguồn tinh dầu khác, nổi tiếng vì hương thơm ngọt ngào pha chút cay đặc trưng; trong công nghiệp thực phẩm nó được dùng như chất tạo hương cho kẹo, đồ nướng, đồ uống và thuốc lá, đồng thời đóng vai trò chất điều vị giúp ổn định mùi trong các sản phẩm chứa hương quế hoặc vani, còn trong mỹ phẩm và nước hoa, hợp chất này góp phần tạo tầng hương ấm áp, kéo dài độ bền mùi và che giấu mùi nền của dung môi, lại có khả năng hấp thụ tia UV-B nên thường được kết hợp trong sản phẩm chống nắng, son môi và kem dưỡng da để tăng chỉ số SPF; trong nông nghiệp nó được nghiên cứu làm thuốc trừ sâu sinh học nhờ hoạt tính xua đuổi côn trùng và ức chế nấm; trong dược phẩm, methyl trans-cinnamate là trung gian tổng hợp cho các dẫn chất chống viêm, kháng khuẩn, kháng nấm và chống oxy hóa, đồng thời được sử dụng trong các hệ nano nhắm đích để cải thiện sinh khả dụng của hoạt chất polyphenol; ngoài ra, nhờ mang nhóm ester không no, hợp chất này còn tham gia phản ứng trùng hợp, copolymer hóa và ester hóa chéo, phục vụ ngành nhựa, mực in, sơn phủ và vật liệu thông minh có mùi thơm.
