    Isovaleraldehyde (CAS 590-86-3) là một aldehyde mạch nhánh có mùi hạt lên men đặc trưng, được ứng dụng rộng rãi trong công nghiệp hương liệu – nước hoa để tạo nốt cỏ khô, caramel, chocolate và trái cây cho kẹo, đồ uống, thuốc lá; trong công nghệ thực phẩm nó đóng vai trò chất tạo hương tự nhiên-tương đồng và tiền chất để este hoá thành isovalerate cho hương dừa, dâu, quả chín; trong mỹ phẩm nó tinh chỉnh giai đoạn “dry-down” của xà phòng, dầu gội, chất tẩy rửa; với vai trò hoá chất trung gian, isovaleraldehyde được hydroxy-hoá, oxi-hoá hoặc amin-hoá để tổng hợp vitamin B1, B6, isovaleronitrile, isovaleric acid, tiền chất dược phẩm kháng co giật, phụ gia thức ăn chăn nuôi, thuốc trừ sâu pyrethroid, nhựa alkyd và chất dẻo; hợp chất này cũng được dùng làm “xây khung carbon” trong tổng hợp hữu cơ, nguyên liệu điều chế rượu isopentyl, chất xúc tiến trong sản xuất quang khởi động, và chất chỉ thị cảm quan trong nghiên cứu bia rượu mô phỏng quá trình lên men.
