    Dihydrocarvone (CAS 5948-04-9) là một monoterpen keton có mùi bạc hà, thảo mộc và hơi long não, được ứng dụng rộng rãi trong hương liệu và thực phẩm: dùng trực tiếp như thành phần tạo hương tươi mát trong nước hoa, xà phòng, chất tẩy rửa và sản phẩm chăm sóc cá nhân; làm chất tạo hương cho kẹo, chewing gum, đồ uống và hương miệng trong kem đánh răng/nước súc miệng với cảm giác mát dịu hơn menthol; đồng thời là nguyên liệu trung gian quan trọng để tổng hợp các este dihydrocarvyl (acetat, propionat...) và các dẫn xuất p-menthane/dihydrocarveol phục vụ ngành hương liệu, cũng như làm khung cyclohexanone thuận tiện trong tổng hợp hữu cơ các hợp chất dược – nông hóa và nghiên cứu xúc tác chọn lọc (hydro hóa, epoxi hóa, Baeyer-Villiger tạo lacton); ngoài ra, hợp chất còn được dùng như chất chuẩn/chuẩn hiệu chuẩn trong GC-MS cho nhóm monoterpen keton, và nhờ tồn tại dưới dạng hai đồng phân cis/trans (thường ở dạng hỗn hợp kỹ thuật) cho phép điều chỉnh sắc thái mùi theo mục đích ứng dụng công nghiệp.
