    2-Nonanone (CAS 821-55-6) là một xeton mạch hở có mùi trái cây béo nhẹ, thường được khai thác trong công nghiệp hương liệu – thực phẩm để bổ sung sắc hương “kem sữa, dừa, bơ” cho bánh kẹo, đồ uống và sản phẩm sữa; trong mỹ phẩm và nước hoa, nó được dùng làm nốt hương giữa giúp cân bằng mùi trái cây, cỏ xanh và gỗ; ở lĩnh vực bảo vệ thực vật, 2-Nonanone được ghi nhận có khả năng xua đuổi hoặc làm rối loạn hành vi côn trùng nên được ứng dụng trong bẫy sinh học, màng bao gói nông sản và chất dẫn dụ sinh thái; trong phòng thí nghiệm, hợp chất này là dung môi trung bình để chiết tinh dầu, chất chuẩn nội chuẩn GC-MS, cũng như tiền chất tổng hợp cho các keton, acid béo và ester chuỗi C9; thêm vào đó, nó hiện diện tự nhiên trong cà chua, táo, xoài, sữa bò và rượu vang, nên còn được dùng làm chỉ thị hương vị cho nghiên cứu đánh giá chất lượng thực phẩm và truy xuất nguồn gốc nông sản.
