Dextranase is an enzyme that hydrolyzes dextran (CAS 9025-70-1) and is applied in several industries to improve processability: in sugar refining to break down dextran formed by bacteria, reducing viscosity and aiding filtration and crystallization; in wine and beer production to clarify must and beverages by breaking down dextran, thereby reducing haziness and facilitating filtration; in fruit juice and other beverage processing to assist clarification and viscosity control; and in industrial cleaning of food-processing equipment to degrade dextran-containing soils and biofilms, supporting sanitation and maintenance.
