    Pyrazineethanethiol (CAS 35250-53-4) là hợp chất hương liệu chứa lưu huỳnh thuộc họ pyrazin, được sử dụng phổ biến để tái tạo mùi rang khô, cà phê, ca cao, bánh mì, thịt nướng, hạt có dầu và vị umami trong thực phẩm mặn; người ta bổ sung vi lượng chất này vào gia vị, nước xốt, súp ăn liền, snack, thức ăn chăn nuôi, mồi câu, thuốc lá điện tử và mỹ phẩm để tăng cường chiều sâu hương vị, che lấp khiếm khuyết, đồng thời dùng nó như chất trung gian tổng hợp các phân tử hương khác, tiêu chuẩn tham chiếu trong phân tích GC/MS và công cụ nghiên cứu cơ chế tạo hương khi phản ứng Maillard.
