    Perillene (CAS 539-52-6) là một monoterpen tự nhiên mang nốt hương thảo mộc–citrus đặc trưng kiểu tía tô, được ứng dụng chủ yếu trong hương liệu và thực phẩm để bổ sung sắc thái tươi, xanh và hơi cay cho đồ uống, kẹo, chewing gum, gia vị và nước xốt theo phong cách Á châu, cũng như trong nước hoa, chăm sóc cá nhân và chăm sóc nhà cửa (xịt phòng, nến, tinh dầu khuếch tán); trong R&D và kiểm nghiệm, chất này đóng vai trò chất đánh dấu/chuẩn tham chiếu khi phân tích GC–MS tinh dầu Perilla frutescens và các nguyên liệu giàu monoterpen, đồng thời là nguyên liệu trung gian thuận lợi cho tổng hợp/biến đổi (oxi hóa, epoxi hóa, cộng Diels–Alder) để tạo dẫn xuất mùi hoặc thành phần chức năng; ngoài ra Perillene còn được khảo sát về khả năng kháng vi sinh, xua đuổi côn trùng và kiểm soát mùi trong công thức thân thiện môi trường, cùng các kỹ thuật ổn định/giải phóng có kiểm soát (bao vi nang, bao gói cyclodextrin) nhằm hạn chế bay hơi và oxy hóa, với việc sử dụng cần tuân thủ quy định hiện hành (ví dụ IFRA, tiêu chuẩn hương liệu/thực phẩm địa phương) và lưu ý an toàn terpene (nhạy cảm da, tạo peroxit khi oxy hóa).
