    Methylheptenone (CAS 409-02-9) là một xeton mạch nhánh dễ bay hơi được ưa dùng trong công nghiệp hương liệu để tạo các nốt hương cam chanh, xanh lá và hơi trái cây trong nước hoa, xà phòng, chất tẩy rửa, chất khử mùi và sản phẩm chăm sóc cá nhân; với khả năng hòa trộn tốt, nó còn được sử dụng ở hàm lượng vi lượng làm chất điều vị trong đồ uống, kẹo, các ứng dụng sữa/chất béo và hương liệu mô phỏng tự nhiên, đồng thời đóng vai trò nguyên liệu trung gian cho tổng hợp các dẫn xuất terpenoit và chất tạo mùi thông qua phản ứng Michael/aldol; trong nghiên cứu, các đồng phân methylheptenone được dùng như chất chuẩn phân tích và mùi mô hình để khảo sát cơ chế khứu giác, cũng như được đánh giá như thành phần của mồi dụ hoặc chất xua đuổi côn trùng trong bẫy giám sát; ngoài ra, đặc tính hòa tan và độ bay hơi của nó hỗ trợ vai trò làm chất mang mùi, chất điều chỉnh tốc độ bay hơi và trung gian quy trình trong sản xuất hương–liệu quy mô công nghiệp.
