    Gluconolactone (CAS 90-80-2) là hợp chất lactone dẫn xuất từ axit gluconic, được ứng dụng rộng rãi như một acidulant nhẹ và nguồn axit gluconic giải phóng từ từ trong chế biến thực phẩm; điển hình nhất là làm coagulant cho đậu nành (tofu) và điều chỉnh độ chua của các sản phẩm chế biến.
