    γ-Octalactone (CAS 104-50-7) là một hợp chất hương liệu mang mùi kem dừa, đào chín và sữa béo, được ứng dụng rộng rãi để điều chỉnh hương vị trong thực phẩm – đặc biệt là bánh kẹo, sữa, kem, đồ uống có cồn và không cồn – đồng thời tạo chiều sâu và độ “ngậy” cho các hỗn hợp hương; trong công nghiệp nước hoa, nó được thêm vào các tông mùi trái cây, nhiệt đới và gourmand nhằm tăng độ ấm áp, dễ chịu; ngoài ra, γ-Octalactone còn được đưa vào sản phẩm chăm sóc cá nhân như xà phòng, dầu gội, sữa tắm, nến thơm và chất khử mùi để tái hiện cảm giác ngọt ngào, mềm mượt, và đôi khi được sử dụng như một chất tham chiếu trong nghiên cứu phân tích hương để hiệu chuẩn sắc ký khí hoặc đánh giá mức độ chín của trái cây.
