  • Ứng dụng

    Allyl disulfide, còn gọi là diallyl disulfide, là thành phần mùi vị đặc trưng của tỏi và được khai thác rộng rãi để tạo hương thực phẩm, làm chất tăng cường hương vị cho nước chấm, snack, thịt chế biến; trong công nghiệp hương liệu nó đóng vai trò tiền chất tạo hợp chất lưu huỳnh mang mùi hành tỏi bền nhiệt; trong dược-thực phẩm là hoạt chất nghiên cứu về khả năng chống ôxy hoá, kháng khuẩn, giảm cholesterol, hỗ trợ bảo vệ gan; trong nông nghiệp được dùng làm chất xua đuổi côn trùng, ức chế nấm, kích thích nảy mầm; về tổng hợp hữu cơ, nó là nguồn lưu huỳnh để tạo polysulfide, cao su lưu hoá, chất điều biến polyme, tiền thân của các thiol, sulfoxide, sulfone; trong phòng thí nghiệm còn được sử dụng làm chất tạo mùi chuẩn cho thiết bị phân tích, làm tác nhân ghép trên bề mặt kim loại, chất đánh dấu đồng vị lưu huỳnh cho nghiên cứu cơ chế phản ứng, và được xem là mô hình để khảo sát tính năng sinh học của hợp chất organosulfur thiên nhiên.
