    Carotol (CAS 465-28-1) là một rượu sesquiterpen tự nhiên, thành phần chủ đạo của tinh dầu hạt cà rốt, được ứng dụng rộng rãi trong công nghiệp hương liệu, thực phẩm và nghiên cứu: trong nước hoa và sản phẩm chăm sóc cá nhân, carotol mang sắc thái mùi củ cà rốt/đất/gỗ thảo mộc, đồng thời đóng vai trò chất điều biến và chất cố định có điểm sôi cao cho các tông chypre, fougère, gỗ và gia vị cũng như các cấu trúc hương lấy cảm hứng từ rễ củ; trong tạo hương thực phẩm, nó được dùng ở mức vết để bổ sung sắc thái đất và củ cho súp, hỗn hợp gia vị và đồ uống; trong kiểm nghiệm, carotol là chất chuẩn GC-MS/GC-FID và chỉ thị hóa học cho xác thực/truy xuất nguồn gốc tinh dầu hạt cà rốt; trong nghiên cứu sinh học, hợp chất này được khảo sát về tiềm năng kháng nấm/kháng khuẩn, xua đuổi côn trùng và bảo quản sau thu hoạch; trong tổng hợp hữu cơ, carotol là khung sesquiterpen thuận tiện để phát triển các dẫn xuất tự nhiên mới.
