    L-Ascorbic acid (Vitamin C, CAS 50-81-7) là một chất chống oxy hoá tan trong nước có vai trò không thể thay thế trong nhiều lĩnh vực: trong công nghiệp thực phẩm, nó được bổ sung vào đồ uống, thịt, bánh kẹo và rau quả đóng hộp để ngăn nâu hóa, giữ màu, điều chỉnh pH và gia tăng giá trị dinh dưỡng; trong dược phẩm, nó được điều chế thành viên nén, tiêm, dung dịch uống hoặc kết hợp với kẽm, calcium, rutin nhằm điều trị thiếu hụt vitamin, hỗ trợ miễn dịch, làm lành vết thương và bảo vệ mạch máu; trong mỹ phẩm, nó kích thích tổng hợp collagen, ức chế tyrosinase, làm sáng da và chống lão hoá; trong thức ăn chăn nuôi và nông nghiệp, nó cải thiện sức khoẻ vật nuôi, tăng sức đề kháng cây trồng; ngoài ra còn được dùng như chất khử trong mạ điện, xúc tiến phản ứng polymer và thuốc thử phân tích.
