  • Ứng dụng

    Anethole, (Z)- (cis-anethole, CAS 25679-28-1) chủ yếu được dùng như chất chuẩn phân tích và đối chiếu đồng phân trong kiểm nghiệm tinh dầu hồi, thì là, đại hồi và các chế phẩm hương liệu chứa anethole (theo dõi sự đồng phân hóa, đánh giá độ tinh khiết, xác thực nguồn gốc), trong phát triển phương pháp GC/LC-MS (thiết lập chỉ số lưu, đường chuẩn, nghiên cứu độ ổn định/độ nhạy ánh sáng), và như cơ chất mô hình cho nghiên cứu cơ chế phản ứng hữu cơ (cộng điện sinh, epoxid hóa, hydrobor hóa-oxy hóa) cũng như nghiên cứu độc tính - chuyển hóa (so sánh với đồng phân (E) về hoạt tính sinh học, chuyển hóa qua P450, hình thành epoxit/1'-hydroxy, đánh giá an toàn); ngoài ra còn được dùng trong R&D hương - nước hoa và cảm quan như chất so sánh/chuẩn huấn luyện để tinh chỉnh nốt hồi - cam thảo và kiểm soát tạp đồng phân gây mùi gắt, trong nghiên cứu ổn định - bao gói để đánh giá ảnh hưởng ánh sáng/acid lên sự chuyển hóa cis <-> trans trong đồ uống chứa tinh dầu, và đôi khi làm nguyên liệu trung gian tổng hợp dẫn xuất anisyl hoặc khảo sát cấu trúc - tác dụng về kháng vi sinh/côn trùng; do kém bền và hồ sơ an toàn kém thuận lợi hơn (E)-anethole, đồng phân (Z) hiếm khi dùng trực tiếp làm chất tạo hương thực phẩm và chủ yếu phục vụ mục đích nghiên cứu và kiểm soát chất lượng.
