    Allyl isothiocyanate (AITC) có mùi hăng mạnh, là thành phần tự nhiên trong cải ngựa, mù tạt và các loài Brassicaceae, được ứng dụng rộng rãi làm chất tạo vị cay nồng cho mù tạt, wasabi, dưa muối; làm chất bảo quản sinh học nhờ khả năng ức chế vi khuẩn, nấm mốc và côn trùng hại trong thực phẩm, ngũ cốc; dùng như thuốc trừ sâu sinh học và chất xông khử trùng kho bãi trong nông nghiệp bền vững; được nghiên cứu trong y dược như tác nhân chống oxy hóa, chống viêm, ức chế tế bào ung thư; trong công nghiệp hóa chất, AITC đóng vai trò chất trung gian tổng hợp polyme, dược phẩm, thuốc nhuộm, chất dẻo; đồng thời xuất hiện trong cảm biến mùi và nghiên cứu sinh thái nhằm mô phỏng cơ chế phòng vệ hóa học của thực vật họ cải.
