    3-Octen-2-one (CAS 1669-44-9) là một xeton alpha,beta-không no mạch C8 có hương xanh, nấm và hơi béo, được ứng dụng làm chất tạo hương trong thực phẩm để bổ sung sắc thái nấm, rau xanh, bơ sữa và rang nướng trong súp, snack, nước sốt, gia vị, bánh nướng và đồ uống; dùng trong nước hoa và sản phẩm gia dụng nhằm tạo nốt green/earthy và tăng chiều sâu cho các hòa âm hoa cỏ, gỗ và ozonic; đồng thời là nguyên liệu trung gian tổng hợp hữu ích nhờ chức năng enone (chấp nhận Michael, dienophile trong Diels–Alder, khử chọn lọc tạo alcohol tương ứng, epoxid hóa/di-hydroxyl hóa, kéo dài mạch); được sử dụng làm chất tham chiếu/chuẩn phân tích và chuẩn mùi (xây dựng thư viện GC-MS, nghiên cứu ngưỡng cảm quan, động học và giải phóng mùi trong ma trận thực phẩm) cũng như chất nền mô hình để khảo sát cơ chế phản ứng và đánh giá xúc tác; lưu ý tính dễ bay hơi và khả năng gây kích ứng, cần thao tác trong tủ hút, bảo quản kín ở nơi mát tối, và tuân thủ giới hạn sử dụng theo quy định hương liệu thực phẩm/IFRA.
