    3-Octanone (CAS 106-68-3) là một xeton mạch thẳng có mùi nấm dễ nhận biết, được ứng dụng rộng rãi trong công nghiệp hương liệu để tạo hương nấm, hương kem và hương trái cây cho thực phẩm, đồ uống, kẹo và sản phẩm sữa; trong nước hoa và mỹ phẩm để tạo nốt hương đất dịu nhẹ, cân bằng các thành phần hoa cỏ; trong công nghệ thuốc lá điện tử để tái hiện mùi vị tự nhiên; làm dung môi hoặc chất tạo vị trong mực in, chất tẩy rửa và sơn phủ; đồng thời đóng vai trò tiền chất tổng hợp trong hóa chất nông nghiệp, dược phẩm và các dẫn xuất xeton cao cấp nhờ tính ổn định hóa học và khả năng pha trộn tốt với nhiều dung môi hữu cơ.
