    Sodium Erythorbate (CAS number: 6381-77-7) is widely used in food processing as an antioxidant and reducing agent to prevent oxidation and preserve color, flavor, and freshness in many processed foods and beverages. In meat curing, it acts as a curing aid when used with nitrites, accelerating color development and stabilizing the characteristic cured appearance.
