    Zingiberene (CAS 495-60-3) là một sesquiterpene chủ đạo trong tinh dầu gừng, được ứng dụng rộng rãi làm thành phần tạo hương vị và mùi thơm nhờ sắc thái cay ấm, gỗ, hơi cam chanh: trong thực phẩm – đồ uống để tăng cường “tính gừng” cho kẹo, bánh nướng, bia/đồ uống pha chế và sản phẩm không cồn; trong nước hoa và hương mỹ phẩm/hương gia dụng để tạo điểm nhấn ấm áp, tươi cay ở tầng top/heart của các cấu trúc oriental, gourmand, fougère và hương gia vị, đồng thời phối hợp tốt với cam chanh, tiêu, bạch đậu khấu, vetiver và patchouli; trong sản phẩm chăm sóc cá nhân, nến, tinh dầu khuếch tán để mang lại cảm giác ấm và thơm sạch; trong phân tích – kiểm nghiệm như chất chuẩn/marker GC–MS đánh giá độ tinh khiết, tính xác thực và sự biến đổi theo thời gian của tinh dầu gừng và nguyên liệu liên quan; trong công nghệ hương liệu làm đối tượng vi bao/bao vi nang nhằm cải thiện độ ổn định oxy hóa và kiểm soát giải phóng hương; trong nông nghiệp – sinh thái học hóa học được nghiên cứu như hợp chất dễ bay hơi tham gia cơ chế phòng vệ thực vật và có tiềm năng xua đuổi/ức thực một số côn trùng, góp phần cho các chiến lược quản lý dịch hại tổng hợp; trong công nghệ sinh học – hóa học xanh đóng vai trò là khối xây dựng terpene tái tạo cho chuyển hóa thiết kế (sản xuất qua vi sinh) và làm khung phân tử để tạo dẫn xuất khảo sát hoạt tính sinh học, với việc sử dụng cụ thể tùy thuộc quy định và yêu cầu an toàn – cảm quan của từng ứng dụng.
