    Axít lactic (CAS 50-21-5) là một acid hữu cơ yếu có mặt tự nhiên trong sữa chua và cơ bắp, nay được sản xuất quy mô lớn bằng lên men tinh bột, và nhờ tính an toàn sinh học nên được ứng dụng cực kỳ đa dạng: trong công nghiệp thực phẩm nó đóng vai trò chất điều chỉnh độ chua, chất bảo quản, tác nhân tạo hương lên men trong đồ uống, bánh mì, phô-mai và thịt chế biến; trong dược phẩm và y sinh, axít lactic được dùng điều chỉnh pH dung dịch tiêm truyền, làm tá dược giữ ẩm, diệt khuẩn trong nước rửa miệng, dung dịch thẩm tách, đồng thời tạo môi trường nuôi cấy vi sinh probiotic; trong mỹ phẩm, đây là thành phần AHA tẩy tế bào chết, làm sáng da, cân bằng pH và cấp ẩm, hiện diện trong kem dưỡng, serum và dung dịch vệ sinh; trong hóa chất công nghiệp, nó là tiền chất quan trọng để trùng hợp thành poly(lactic acid) PLA – nhựa sinh học có thể phân hủy dùng cho bao bì, sợi dệt, thiết bị y tế cấy ghép, in 3D – cũng như tạo ester lactic làm dung môi sinh học, chất nhựa hóa, và tác nhân tẩy rửa kim loại; axít lactic còn dùng trong thuộc da, nhuộm vải, xử lý bêtông, điều hòa nước thải, ức chế ăn mòn, và vì có nguồn gốc tái tạo nên ngày càng được ưu tiên trong các quy trình kinh tế tuần hoàn và sản xuất xanh.
