    Gamma-ionone (3-Methyl-4-(2,6,6-trimethyl-1-cyclohexen-1-yl)-3-buten-2-one, CAS 79-89-0) là một thành phần hương quan trọng mang sắc tím/hoa diên vĩ, phấn, gỗ và trái chín, được ứng dụng rộng rãi trong nước hoa (fine fragrance), xà phòng, chất tẩy rửa, sữa tắm, chăm sóc tóc, chất khử mùi và nến thơm; đồng thời được dùng làm chất tạo hương thực phẩm/đồ uống với nốt mâm xôi, trà, thuốc lá (tùy giới hạn cho phép theo quy định/IFRA), làm nguyên liệu trung gian để tổng hợp retinoid và carotenoid (ví dụ β-caroten, vitamin A) cũng như các dẫn xuất terpene khác, và làm chất chuẩn/marker trong phân tích GC–MS phục vụ nghiên cứu hương liệu, kiểm soát chất lượng, mô phỏng/bao vi nang phóng thích hương và đánh giá tương tác mùi trong ma trận tiêu dùng; trong công thức tiêu dùng, nó còn giúp che mùi lạ, tăng độ khuếch tán và độ bền hương nhờ độ ổn định tương đối tốt trong điều kiện kiềm/oxy hóa nhẹ.
