  • Ứng dụng

    2-Methoxy-3-(1-methylpropyl)pyrazine (còn gọi là isobutyl methoxypyrazine, IBMP, CAS 24168-70-5) là phân tử hương có ngưỡng cảm nhận cực thấp, được ứng dụng rộng rãi như một chất điều chỉnh mùi vị “rau xanh – ớt chuông – đất ẩm” trong pha chế hương liệu thực phẩm, rượu vang, bia thủ công, cà phê rang và socola; là chất chuẩn phân tích dùng hiệu chuẩn GC-MS/GC-O để định lượng methoxypyrazine trong nho, cà phê và nguyên liệu ủ; được sử dụng trong nghiên cứu sinh lý học cây trồng nhằm theo dõi quá trình chín và quản lý thu hoạch, đồng thời có vai trò trong sinh thái hóa học làm tín hiệu bán hóa hấp dẫn côn trùng gây hại, giúp thiết kế bẫy sinh học; ngoài ra còn được khai thác trong chế phẩm nước hoa nốt gỗ xanh, trong vật liệu bao bì tạo hương, cũng như trong kiểm soát chất lượng để phát hiện “off-flavor” trong thực phẩm đóng hộp.
