  • Ứng dụng

    2-Isopropyl-3-methoxypyrazine (IPMP, CAS 25773-40-4) là hợp chất mùi cực mạnh có hương ngô non, ớt xanh và đất, được ứng dụng rộng rãi trong ngành hương liệu-thực phẩm để tạo hoặc gia tăng sắc thái “rau xanh” cho snack, nước giải khát, đồ hộp; trong nghiên cứu khoa học để hiệu chuẩn thiết bị sắc ký khí, làm chuẩn cảm quan cho các khóa huấn luyện phân tích cảm quan rượu vang, cà phê, bia; trong kiểm soát chất lượng nông sản nhằm phát hiện sớm nhiễm khuẩn hoặc nấm mốc gây mùi lạ; đồng thời được dùng trong sinh thái học để khảo sát sự định hướng mùi ở côn trùng và quy luật phân bố hợp chất pyrazine trong môi trường tự nhiên.
