  • Ứng dụng

    2-Isobutyl-3-methoxypyrazine (IBMP) là hợp chất hương tự nhiên nổi tiếng với mùi “rau xanh” đặc trưng (tương tự ớt chuông, lá tía tô, ngô non) nên được ứng dụng rộng rãi trong công nghiệp hương liệu–thực phẩm để gia giảm hương vị cho rượu vang, cà phê rang, trà, sô-cô-la và sản phẩm rau củ chế biến; trong nghiên cứu kiểm soát chất lượng nông sản người ta dùng IBMP như chất chỉ thị mức chín của nho và ớt chuông; trong sản xuất hương tổng hợp, nó đóng vai trò thành phần tạo “nốt xanh” cho nước hoa, nến thơm, tinh dầu khuếch tán; các phòng phân tích cảm quan, viện công nghệ đồ uống, và nhà sản xuất cảm biến mùi cũng sử dụng IBMP để hiệu chuẩn thiết bị đánh giá hương vị nhằm đảm bảo độ nhạy và tính tái lặp.
