  • Ứng dụng

    Anethole (CAS 104-46-1) là hợp chất thơm chính của hồi, thì là và tiểu hồi, được ứng dụng rộng rãi làm chất tạo hương vị cam thảo/anis trong đồ uống có cồn (pastis, ouzo, sambuca), kẹo, bánh, sản phẩm sữa, đồ nướng và đồ ngọt; làm hương trong nước hoa, xà phòng, chất tẩy rửa, nến thơm và mỹ phẩm; tạo hương che mùi trong kem đánh răng, nước súc miệng và dược phẩm không kê đơn (si-rô ho, viên ngậm), đồng thời giúp cải thiện cảm quan khi che vị đắng của hoạt chất; có hoạt tính kháng khuẩn, kháng nấm, chống oxy hóa và xua/diệt côn trùng, vì vậy được khai thác trong bảo quản thực phẩm nguồn gốc tự nhiên, vật liệu bao gói/bao màng ăn được, phụ gia thức ăn chăn nuôi và dẫn dụ ong trong nghề nuôi ong; trong tổng hợp hữu cơ, anethole là nguyên liệu để sản xuất các dẫn xuất p-methoxy như anisaldehyde và anisic acid, cũng như làm thành phần dầu thơm/hydrocarbon kỵ nước tạo hiệu ứng “ouzo” giúp hình thành hệ vi nhũ dùng cho đồ uống và hệ vận chuyển hương liệu; về an toàn, anethole được FDA công nhận GRAS cho mục đích tạo hương (thường dùng ở mức ppm) và có trong danh mục hương liệu của EU, nhưng cần kiểm soát liều dùng, độ tinh khiết (ưu tiên đồng phân trans), độ nhạy ánh sáng/oxy và tính tương kỵ vật liệu trong công thức.
